Notes: a hand crafted cellar cured cheese with the earthy character of a fine cheddar coupled with a subtle hint of bleu flavor.

King Island - Roaring forties blue.

Notes: Full flavored blue cheese with a sweet, slightly nutty character and a rich mouth feel. The rind-less cheese is matured in its wax coating, promoting its sweet and fruity flavor. The wax also assists in retaining the blue's moisture, creating a smooth and creamy texture.
